- Peel your potatoes and cut them into even squares (this helps them cook evenly).
- Add them to a large pot and cover with cold water starting with cold water helps the potatoes cook more evenly.

- Bring to a boil and cook until the potatoes are fork-tender, about 15–20 minutes.
- Whip the cottage cheese in a blender or food processor until smooth, scraping down the sides.

- Drain the potatoes well and return them to the pot.
- Add cottage cheese, milk of choice, salt, pepper, and nutmeg.
