Cottage Cheese Mashed Potatoes

This cottage cheese mashed potato recipe is protein-rich but creamy, smooth, and slightly tangy. It is such a quick and easy dinner side-dish that's creamy and comforting.

Ingredients
  

  • 6 potatoes
  • 1 cup cottage cheese
  • ½ cup milk
  • salt to taste
  • pepper to taste
  • 1 pinch nutmeg

Instructions
 

  • Peel your potatoes and cut them into even squares (this helps them cook evenly).
  • Add them to a large pot and cover with cold water starting with cold water helps the potatoes cook more evenly.
  • Bring to a boil and cook until the potatoes are fork-tender, about 15–20 minutes.
  • Whip the cottage cheese in a blender or food processor until smooth.
  • Drain the potatoes well and return them to the pot.
  • Add cottage cheese, milk of choice, salt, pepper, and nutmeg.
  • Mash everything together until you reach your desired consistency. You can leave it a bit chunky or go smooth and creamy.

Notes

  • Use warmed milk for a fluffy mash.
  • You can use an electric whisk to mash your potatoes if you don't have a potato masher and for a quick and smooth mash.
  • You can adjust the consistency by adding more cottage cheese/milk depending on whether you like it thicker or creamier.
