    High Protein Mashed Potatoes

    This high protein mashed potato is creamy, fluffy, and buttery. It's the perfect side dish for a potato lover who doesn't want to compromise on their protein intake. Delivering a whopping 14.7 grams of protein per serving, this recipe will be a staple in your weekly meal plan.

    This dish will pair really well with one of my liver recipes such as my Lebanese chicken liver, my hidden liver meatballs or my healthy beef liver and onions recipe.

    Since this high protein mashed potatoes recipe is high in protein, it will help with weight loss in a sense it will increase satiety.

    This is a great alternative to regular mashed potatoes for toddlers as they can never tell it has beans in it, you can also try this mash recipe with cottage cheese.

    Why this recipe is a hit

    • Comfort food: its' amazing to find healthier more nutrient dense and in this case high protein alternatives to comfort foods we grew up with, and this one doesn't fail to provide that.
    • Easy and quick to make: you will only stand up in the kitchen during the time the potatoes are boiling when you will prep the other ingredients and clean up as you go.
    • 3 main ingredients: made with potatoes, beans and Greek yogurt. This mashed potato recipe is made with just three simple ingredients that are readily available.

    Potatoes: for this recipe I used Russet potatoes because they make fluffy creamy mashed potatoes.

    White beans: I used a can of already cooked and ready to eat beans but you can soak and/or pressure cook yours.

    Plain Greek yogurt: I used full fat Greek yogurt for extra flavor. You can replace it with cottage cheese as it is also high in protein.

    Butter: I always use the animal based butter but feel free to use vegan butter.

    Nutmeg: this is my favorite spice to add to any potato dish. I prefer it whole and I grate it just before adding but you can buy the already ground nutmeg

    How to make high protein mashed potatoes

    Wash, peel and cut potatoes. Place them in a large pot filled with cold water to boil.

    In the meantime, rinse your beans and mashed them either with a fork or using a good food processor.

    Once the potatoes are fork tender, drain and place on top of the mashed beans, use a potato masher and mash until you achieve a creamy texture.

    Tips and recipe variations

    When mashing the white beans try not to leave any large chunks so that it blends well with the potatoes once mashed.

    If you prefer runnier mashes potatoes or you added more beans you can add in more Greek yogurt, whole milk, almond milk or even heavy cream for creamy richness

    Variations of this recipe are: garlic gloves, garlic powder, roasted garlic, fresh herbs or fresh chives.

    Storage instructions

    As soon as your high protein mashed potatoes is cooled down store it in an airtight container for three to five days.

    It can freeze up to 12 months.

    • 3 potatoes
    • ¾ cup white beans
    • ½ cup Greek yogurt
    • 2 tablespoon butter
    • ¼ teaspoon nutmeg
    • salt
