Why this recipe is a hit
- Comfort food: its' amazing to find healthier more nutrient dense and in this case high protein alternative to comfort foods we grew up with and this one does't fail to provide that.
- Easy and quick to make: you will only stand up in the kitchen during the time the potatoes are boiling when you will prep the other ingredients and clean up as you go.
- 3 main ingredients: made with potatoes, beans and Greek yogurt. This mashed potato recipe is made with just three simple ingredients that are readily available.
Ingredients
Potatoes: for this recipe I used Russet potatoes because they make fluffy creamy mashed potatoes.
White beans: I used a can of already cooked and ready to eat beans but you can soak and/or pressure cook yours.
Plain Greek yogurt: I used full fat Greek yogurt for extra flavor. You can replace it with cottage cheese as it is also high in protein.
Butter: I always use the animal based butter but feel free to use vegan butter.
Nutmeg: this is my favorite spice to add to any potato dish. I prefer it whole and I grate it just before adding but you can buy the already ground nutmeg
Salt: to season
Black pepper: to season
