High Protein Mashed Potatoes

This high protein mashed potato is creamy, fluffy, and buttery. Thanks to two secret ingredients, this comes with a whopping 14.7 grams of protein per serving.

- 3 potatoes
- ¾ cup white beans
- ½ cup Greek yogurt
- 2 tablespoon butter
- ¼ teaspoon nutmeg
- salt
- pepper
Wash, peel and cut potatoes. Place them in a large pot filled with cold water to boil.
In the meantime, rinse your beans and mashed them either with a fork or using a good food processor.
Once the potatoes are fork tender, drain and place on top of the mashed beans, use a potato masher and mash until you achieve a creamy texture.
While mashing the white beans try not to leave any large chunks so that it blends well with the potatoes once mashed.
If you prefer runnier mashes potatoes or you added more beans you can add in more Greek yogurt, whole milk, almond milk or even heavy cream for creamy richness
Variations of this recipe are: garlic gloves, garlic powder, roasted garlic, fresh herbs or fresh chives.
