Key ingredients

Cottage cheese: Packed with protein. I like to use full-fat for the best taste. You can replace it with Greek yogurt, blended ricotta or dairy‑free yogurt.
Ground beef: Another great protein source, it has iron, B‑12 and is full of umami. You can replace it with Ground turkey, chicken, tofu or lentils.
Sweet potatoes: The healthy carbs we'll be using for this recipe, you can replace them with butternut or delicata squash, russet potatoes, or cauliflower rice.
Avocado: Adds healthy fats, creaminess, and freshness. You can use guacamole or just sliced avocadoes seasoned with salt, pepper and a squeeze of lime juice.

Cilantro: optional for garnish
Hot honey: Optional for a sweet and spicy infusion.
Salt: to taste

How to make a viral cottage cheese sweet potato beef bowl

Sweet potatoes: Wash and peel (or you can leave the skin on for extra fiber), cube, toss with olive oil and salt, then bake on a lined tray at 400°F until tender for about 20 minutes. You can air fry them instead.

Brown the ground beef in a preheated skillet.

Season with taco seasoning.

Add water, cook until fully water has evaporated.

Avocado mash: Mash avocado, mix with lime juice, diced tomato, red onion, and salt.
Assemble: Place the components into bowls sweet potato, beef, cottage cheese, avocado mash. Garnish with cilantro.

Reheating: Warm meat and potatoes before serving. Don’t heat cottage cheese or avocado, they’re best fresh and cold.
