    This viral cottage cheese sweet potato beef bowl is an easy, high-protein dinner recipe that’s perfect for meal prep or busy weeknights.

    This recipe has 4 main components, 2 of which are perfect for meal prep, and the other 2 can be whipped up on the spot. This is a great high-protein meal.

    Whenever I take my kids out for the day and I come back home minutes before serving dinner, this is my go-to. The variety in textures and tastes is great.

    Why I love this recipe

    High in protein: The ground beef and cottage cheese combined give this cottage cheese bowl a serious protein punch to keep you satiated and fuller for longer.

    Quick and easy: If you have already prepped the sweet potatoes beforehand, this recipe could be ready in 15 minutes, perfect for busy weeknights.

    Balanced and satisfying: I love the variety of textures and flavors in every bite. And the balance of protein, carbs and healthy fats.

    Key ingredients

    Key ingredients to make a cottage cheese beef sweet potato bowl.

    Cottage cheese: Packed with protein. I like to use full-fat for the best taste. You can replace it with Greek yogurt, blended ricotta or dairy‑free yogurt.

    Ground beef: Another great protein source, it has iron, B‑12 and is full of umami. You can replace it with Ground turkey, chicken, tofu or lentils.

    Sweet potatoes: The healthy carbs we'll be using for this recipe, you can replace them with butternut or delicata squash, russet potatoes, or cauliflower rice.

    Avocado: Adds healthy fats, creaminess, and freshness. You can use guacamole or just sliced avocadoes seasoned with salt, pepper and a squeeze of lime juice.

    Taco seasoning: To use as seasoning for the ground beef. You can find my exact recipe and measurements in my cottage cheese taco dip.

    Cilantro: optional for garnish

    Hot honey: Optional for a sweet and spicy infusion.

    Salt: to taste

    Ground black pepper: To taste

    How to make a viral cottage cheese sweet potato beef bowl

    Lined baking sheet with cubed sweet potatoes ready to be baked.

    Sweet potatoes: Wash and peel (or you can leave the skin on for extra fiber), cube, toss with olive oil and salt, then bake on a lined tray at 400°F until tender for about 20 minutes. You can air fry them instead.

    Brown the ground beef in a preheated skillet.

    Add water, cook until fully water has evaporated.

    Avocado mash: Mash avocado, mix with lime juice, diced tomato, red onion, and salt.

    Assemble: Place the components into bowls sweet potato, beef, cottage cheese, avocado mash. Garnish with cilantro.

    To prevent the guacamole/avocado mash from browning, add lime juice.

    Don’t overcook the beef; keep it juicy by adding a splash of water after seasoning.

    Mix before eating so all flavors combine: hot, cold, creamy, savory, sweet.

    Prep components ahead and store separately.

    Customize add-ins: Try hot honey, cilantro, lime, jalapeños, kale, or grilled onions to add extra flavor.

    Storage instructions

    Refrigerator: Store cooked beef, sweet potatoes, cottage cheese, avocado mash in separate airtight containers. Keeps fresh for 3 to 4 days.

    Freezer: Cooked beef and sweet potatoes freeze well up to 3 months. thaw, reheat, and then assemble the cottage cheese taco bowl.

    Reheating: Warm meat and potatoes before serving. Don’t heat cottage cheese or avocado, they’re best fresh and cold.

    • 1 cup cottage cheese
    • 16 oz ground beef
    • 2 sweet potatoes
    • 2 avocado
    • 1 tablespoon extra virgin olive oil
    • salt to taste
    • pepper to taste
    • hot honey optional

    Instructions
