Ingredients
  

  • 1 cup cottage cheese
  • 16 oz ground beef
  • 2 sweet potatoes
  • 2 avocado
  • 1 tablespoon extra virgin olive oil
  • salt to taste
  • pepper to taste
  • hot honey optional
  • cilantro optional for garnish
  • lime optional for garnish

Instructions
 

  • Wash and peel the sweet potatoes (or you can leave the skin on for extra fiber), cube, toss with oil and salt, then bake on lined tray at 400 F until tender, about 20 minutes.
  • Brown in skillet, season with taco seasoning, add water, cook until water has fully evaporated.
  • Mash avocado or cube them mix with lime juice, diced tomato, red onion, and salt.
  • Assemble: Place the components into bowls sweet potato, beef, cottage cheese, avocado mash and garnish with cilantro.

Notes

To prevent the guacamole/avocado mash from browning, add lime juice.
Don’t overcook the beef keep it juicy by adding a splash of water after seasoning.
Mix before eating so all flavors combine hot, cold, creamy, savory, sweet.
