I have started baking this fruit cake when I was first trying to experiment with healthy alternatives of sugary fruit cakes; which I will share in a future post.
This is an easy and simple fruit cake recipe that you can find all the ingredients for in your cupboard or your nearest grocery store.
The choice of nuts and fruits used in this recipe will vary depending on your preference and what's available to you. So, it goes without saying that you don't need to have the exact fruit and nut mix to make it.
I think that the important thing to note about this fruit cake is that the amount of sugar used in the cake batter will depend on the sweetness of your fruits. When I was first experimenting with this recipe really early on I have made the mistake of adding the amount of sugar that I would in any other normal recipe. I found out that when paired with dates, sultanas, dried figs and dried raspberries it was a saccharine factory. Bear in mind the level of the sweetness depending on the fruit mix you are using while adding sugar/sweetner;
Fruit Cake Recipe
Ingredients
- Nuts: dates, dried figs, dried raspberries, almonds, walnuts, dark chocolate.
- 3 Eggs
- 50 g Butter melted
- 20 g Vegetable oil
- 40 g Castor sugar
- ½ teaspoon Vanilla extract
- 1 & ½ cup Plain flour
- 8 g Baking powder
- 1 pinch Salt
Instructions
- Pre-heat the oven at 180C.
- Grease your loaf tin and add a dusting of flour to avoid sticking
- Get your fruit and nut mix chopped to small pieces.
- Mix the eggs, sugar and vanilla untill combined.
- Add the other ingredients little by little while mixing.
- Add a tablespoon of plain flour to the fruit and nut mix.
- Add the fruit and nut mix to the batter mixture.
- Bake the fruit cake mixture in the oven at 180C for 35 to 40 minutes.
- Let the cake cool down and cut into slices.
