    My Favourite Roast Potatoes Recipe

    Thise roast potatoes recipe is my all time favourite. They are just the perfect crowd pleaser side dish.

    My roast potatoes don't require a lot of time to prep but definitely need to roast in the oven for at least an hour.

    If this recipe could replace french fries and tick the crispy on the outside, soft and fluffy on the inside criteria.

    Once we achieve that I think they are in competition for a healthier side dish.

    I have recently tried making a big batch of these roast potatoes and reheat them in a lightly oiled pan and boom! success.

    As you may notice, I like to parboil my roast potatoes to save me more cooking time in the oven.

    I suggest serving them with your roast chicken, any meat dish or even my Moroccan liver recipe.

    My favourite Roast Potatoes Recipe

    My ultimate roast potatoes recipe, perfect as a side dish of a roast dinner. crispy on the outside and fluffly and tender on the inside.

    Prep Time 5 minutes mins
    Cook Time 1 hour hr 15 minutes mins
    Total Time 1 hour hr 20 minutes mins
    Course Side Dish
    Servings 4 people

    Ingredients
      

    • 4 potatoes
    • 4 tablespoon olive oil
    • 1 tablespoon paprika
    • 1 teaspoon Thyme
    • Salt

    Instructions
     

    • Peel the potatoes and cut into 2 inch cubes.
    • Place the potatoes in a pot of cold water and a genenous amount of salt for.
      Parboil for 10 minutes after the water come to a boil.
    • Preheat the oven.
    • Drain the potatoes, let sit for 30 seconds.
    • Add the olive oil, paprika, thyme more salt and shake to make the edges fluffy.
      Season potatoes paprika
    • Drop the potatoes in a baking tray and into the oven for 1 hour.
      Place in tray
    • Give the potatoes a shake half way through. Serve.
