How to make good brownies at home that spear you from shop bought.
I've always loved a good brownie. But whenever I buy them from the shops, they're either too sweet or too cakey for my liking or they don't use a good quality chocolate. Brownies are all about chocolate, it's what makes or breaks a good brownie. You can add nuts such as walnuts or pecans for an additional crunch in each bite of your brownies. in which case I'd add about 100 g crushed of your nut choice.
While using good quality chocolate with higher percentages of cacao you reap the benefits of nutrients that it contains.
Brownies
A simple, quick and easy brownie recipe that I have tried time and time again and that everyone who tastes it approves of it. These brownies can be as fudgy or as cakey as you want it to be depending on how long you bake it in the oven.

- 200 g chocolate Good quality- 70% cocoa or higher
- 100 g brown sugar
- 50 g granulated sugar
- 100 g all purpose flour
- 3 eggs
- 1 teaspoon instant coffee or espresso you can't taste the coffee but it intensifies the chocolate flavor
- ½ teaspoon vanilla extract
- 1 pinch salt
Instructions
- Preheat the oven and coat a baking dish 8/8 with butter or cooking spray and baking paper and set aside.
- Melt the chocolate and butter in a bain-marie ( by placing the bowl on a pot of simmering water without having the water touch the bowl).
- Remove the mixture of melted chocolate and butter from the simmering pot, let it cool for a few minutes.
- Add the brown and granulated sugar and mix well.
- Incorporate each egg one at a time and keep mixing.
- Add the flour bit by bit.
- Add al the other ingredients: salt, coffee and vanilla.
- Spread the batter onto baking dish and place it in the oven for 20 minutes or until the edges start to dry up. it might look undone in the middle but it'll continue baking and set once out of the oven.
