    This cottage cheese banana bread is fluffy, moist, and packed with flavor. This healthier twist on a classic Banana Bread is the perfect way to start your day or satisfy a mid-afternoon craving.

    Craving a high protein indulgence? Look no further. This Banana bread is high protein - Thanks to the eggs AND the special guest: cottage cheese. It has quickly become my family's favorite wholesome and hearty breakfast.

    The name of the game for this viral cottage cheese banana bread is "moist." I know some people cringe at this word but think of it in terms of texture: tender, soft, and full of flavor without being soggy.

    It is gluten-free if using certified gluten free flour and very easy to make. You only need a few simple ingredients. And no, you don't taste the cottage cheese.

    No flour or refined sugar used in this recipe which makes it a healthy alternative to satisfy your banana bread cravings.

    Quick and easy: With just a few simple ingredients and bowl, you can whip up this recipe in 5 minutes. Then, let the oven work its magic!

    Kid friendly: It's naturally sweet and flavorful appealing to children's taste buds and can be easily cut into bite-sized pieces making it perfect for little hands.

    Meal prep friendly: Make a batch -or 2- on the week to last for the whole week.

    Macro-friendly: because I use full fat cotage cheese which is a wholesome high protein low calorie ingredient it provides a satisfying, nutrient-dense base that supports muscle growth and helps keep me full without compromising on taste.

    Ingredients needed

    Cottage cheese: I almost always use full-fat because the flavor is unbeatable, but it also means I don't need to use any other fats like butter or coconut oil, and it still turns out extra moist.

    Oat flour: I chose oat flour because it has higher fiber content. You can use whole wheat all-purpose flour.

    Almond flour: Almond flour helps create a moist crumb, while also adding a subtle nutty flavor that complements the sweetness of the bananas. You can replace it wih equal portion of oat flour if you can't get your hands on it.

    Eggs: A great source of protein and a necessary ingredient to bind the other ingredients. Use them at room temperature.

    Bananas: Overripe and spotty bananas are perfect for banana bread. They add natural sweetness and moisture to the final result.

    Honey: The sweetener of choice. You can replace it with maple syrup, brown rice syrup, monk fruit extract.

    Vanilla: A classic flavor enhancer that brings out the sweetness of the banana and disguised the smell of eggs.

    Cinnamon: A must iwarming spice for any banana bread.

    Baking powder: Rising agent.

    Salt: A small pinch of salt to balance the sweetness and bring out the flavors.

    How to make cottage cheese banana bread

    Prep.: Preheat your oven to 350F/180C and line a loaf tin with parchment paper.

    Step 1- In a large mixing bowl mash the bananas and the other wet ingredients: cottage cheese, eggs, honey, vanilla extract an mix until smooth.

    Step 2 - Add in the rest of the ingredients and mix well until everything is well incorporated.

    Step 3 - Place the batter in the loaf tin and bake for 40-45 min or until a skewer comes dry in the middle.

    Hanaa's tips

    Do not slice the Banana Bread until it has cooled completely, otherwise it will crumble and fall apart.

    Use room temperature eggs to ensure a smoother batter, even baking, a fluffier and quicker rise.

    To prevent over-browning, you can cover the loaf tin with tinfoil halfway through baking. This will help the banana bread cook evenly, avoiding a crispy top and undercooked center.

    Do not overmix the batter otherwise it will become tough, gummy, or unpleasantly chewy.

    Banana Bread Variations

    • Nuts: Add in crushed walnuts, pecans, or almonds.
    • Chocolate: Add in semi-sweet chocolate chips and replace ½ a cup of almond flour with half a cup of cocoa powder for a chocolaty twist.
    • Warm spices: Add ¼ teaspoon of nutmeg, ¼ teaspoon of ginger and a pinch of cloves for a cozy autumnal flavor.
    • Protein powder: Add protein powder instead of almond flour for a high protein banana bread.
    • Muffins: Cook the batter in muffins for 20 minutes and it'll magically turn into banana bread muffins.

    Storage instructions

    Fridge: Allow the banana bread to cool completely before slicing. To store leftovers, place them in an airtight container in the fridge for up to 5 days.

    Freezer: Wrap the cooled loaf or individual slices in a freezer safe bag for up to 6 months. To thaw, let it sit at room temperature for a few hours or reheat gently in the oven.

    Frequetly asked questions

    Why is there no butter or oil used in this recipe?

    Using full-fat cottage cheese and almond flour ensures a moist and flavorful banana bread. I can not recommend full fat -at least 4% milk fat- enough.

    Will I taste the cottage cheese?

    You won't be able to taste the cottage cheese in baked goods. When it's baked into something like banana bread, it blends seamlessly with the other ingredients without a distinct cottage cheese flavor. Plus all the flavor enhancers such as cinnamon and vanilla help disguise it.

    What can I replace cottage cheese with?

    You can replace cottage cheese with full fat Greek yogurt.
