Ingredients
  

  • cup cottage cheese
  • 1 cup almond flour
  • 3 tablespoons maple syrup
  • ½ cup protein powder
  • 1 teaspoon vanilla extract
  • 1 cup semi-aweet chocolate chips

Instructions
 

  • Blend cottage cheese, maple syrup, and vanilla in a food processor or blender until smooth scraping down sides as needed.
  • In a medium mixing bowl, combine almond flour, protein powder and chocolate chips with the blended cottage cheese mixture then add the blended cottage cheese mixture and fold together until well combined.

Notes

Let cookie dough sit for 5 minutes before adjusting the consistency. If it is too wet, add more almond flour 1 tablespoon at a time. If too dry, add a splash of milk of choice.
Don't overmix the dry ingredients into the blended cottage cheese.
If you're a fan of sea salt, you can add a sprinkle to balance the taste.
You can add in peanut butter.
You can store your cottage cheese cookie dough in the fridge for up to 4 days and in the freezer for up to 2 months.
