- 1 ½ cup full fat cottage cheese low-fat and fat-free work too
- ½ cup Greek yogurt
- 2 tablespoons honey or maple syrup
- ½ cup semi sweet chocolate chocolate chips or chocolate bar work
Mix cottage cheese, Greek yogurt, and honey or maple syrup in a blender or food processor until well combined.
Line a baking sheet with parchment paper. Evenly spread the cottage cheese mixture on the parchment paper.
Melt the chocolate chips in a double boiler or microwave in 30-second intervals, stirring between each.
Drizzle the melted chocolate over the cottage cheese mixture. Use a toothpick or knife to swirl the chocolate through the cottage cheese mixture.
Freeze for at least 2 hours until completely firm and break or cut into pieces and store in an airtight container in the freezer.
- Drain excess liquid from the cottage cheese to prevent the frozen bark from crystallising and to get a better texture.
- Blend the base mixture thoroughly for a smoother texture. Blend the cottage cheese and Greek yogurt in a food processor or blender until completely smooth before spreading.
- Give the bark at least 3 hours to freeze completely before adding any final toppings or breaking into pieces.
