- 400 g Beef liver
- 3 Onions
- 3 cloves Garlic
- 3 tablespoon Parsley
- 1 tablespoon Paprika
- 1 tablespoon Cumin
- 1 teaspoon Pepper
- Salt to taste
- 4 tablespoon Olive oil
- Hot sauce optional
Wash and cut liver into small bite size pieces- the smaller the better
Chop the onions and garlic and sauté in olive oil.
Once the onion turns translucent add the beef liver and stir continuously,
Add paprika, cumin, salt and parsley and cook for 5 minutes or until the liver is cooked.
In my opinion, it is best not to overcook liver as the texture gets grainy, which most people don't appreciate, and becomes a total turn off.
The secret to making liver more pleasant to taste is to cut it really small and load it with onions, garlic, spices, and herbs.
