Ingredients
  

  • 1 slice toast sourdough, rye or whole wheat
  • ½ cup cottage cheese full-fat, low-fat or fat-free
  • ½ avocado
  • 4 cherry toamtoes
  • 1 pinch sea salt optional
  • 1 pinch black pepper optional
  • 1 pinch chilli flakes optional

Instructions
 

  • Toast your bread to your desired crispness.
  • Spread a generous layer of cottage cheese over the warm toast.
  • Top with sliced or mashed avocado.
  • Add halved cherry tomatoes.
  • Finish with a sprinkle of chili flakes for a little heat.

Notes

  • Choose a thick-sliced bread like sourdough, rye, or whole grain. It holds the toppings better and doesn't get soggy.
  • Assemble just before eating
  • Some cottage cheese brands can be runny. If needed, give it a quick stir or blot with a paper towel to avoid soggy toast and toast the bread more than you would.
  • To make this super easy, wash and chop toppings like spinach, herbs, or tomatoes in advance. You can even pre-sauté spinach or boil eggs ahead of time and save time on meal prep.
