    The Ultimate Potato Salad Recipe

    This potato salad is a Moroccan recipe that I love to eat fresh, it can be eaten as a side dish or as a base for other ingredients to add to it. This potato salad is so delicious and filling.

    If you're having people over. This potato salad can also be made hours ahead and served when guests arrive so it saves you a bit extra time for chatting and entertaining.

    I usually like to use one potato per person as people tend to go for seconds no matter what other foods are on the menu. I think nothing eats a good ol' potato salad.

    I must add a tip to make your potato salad recipe a success: for potatoes and all root vegetables you should cook always start them out in cold water instead of boiling hot like we do for other vegetables and that's because we want them to cook evenly from the inside as well as the outside.

    I suggest you serve it with the eggplant salad here.

    Ingredients
      

    • 1 Potato
    • 1 Hard boiled egg
    • ¼ cup Parsley finely chopped
    • 1 tablespoon Olive oil extra virgin
    • 1 tablespoon White vinegar
    • Salt, pepper, cumin
    • 1 Small shallot
    • 1 tomato

    Instructions
     

    • Peel the potato, cut it into cubes.

    • Boil the potato in cold water and salt.

    • Grate the hard boiled egg.

    • Mince the shallot and chop the parsley finely.

    • Drain the potatoes.
    • Add the olive oil, vinegar, salt, pepper, cumin, grated egg, shallot and parsley and mix well until combined.
    • Plate the potato salad and add a few slices of tomato.
