Artichoke and red pepper salad is my go to salad in the summer months. I either serve it on a bed of romaine lettuce or mixed greens.
I like roasted peppers on a gas stove top for that grilled flavor, but even tossed in a non stick pan until softened do the job if time is an issue.
I also prefer fresh or frozen artichoke hearts to canned or marinated because I like to boil them to my taste and enjoy them chewy in my Artichoke and red pepper salad.
According to www.nutritionvalue.org artichokes are rich in fiber which means that it will make you fuller for longer, are an amazing antioxidant and rich in vitamin C, K, folate.
Artichoke And Sweet Pepper Salad Recipe
Ingredients
- 1 Romaine lettuce
- 1 Artichoke heart
- 1 Red or yellow pepper
- 3 Cherry tomatoes
- 1 tablespoon Pesto
- 1 tablespoon Parmesan cheese
Instructions
- Wash, dry and cut the lettuce leaves into bite size pieces.
- Cut the canned or marinated artichoke into quarters.
- Roast the peppers on the stove top or in the over, peel the dark layer and cut it into cubes.
- Cut the cherry tomatoes in halves.
- Place all these ingredients by order in a plate, sprinkle some pesto and parmesan.
Notes
I chose to add pesto as a dressing but you can choose any salad dressing you have on hand.
