    2 Ingredient Cottage Cheese Bread

    This 2 ingredient cottage cheese bread recipe is my current protein flatbread alternative. It is creamy and chewy. I love that it's packed with protein, healthy, satiating and super easy to make.

    This TikTok viral cottage cheese wrap is keto, low carb, gluten-free, and high protein. What else could you ask for.

    Although this is considered bread, it requires no kneading or proofing. It would also work great with my cottage cheese egg salad.

    Why I love this recipe

    Healthy bread: I am Moroccan and we love our breads, we eat bread with breakfast lunch and dinner. There were time when I was going low carb and the thought of of not having bread especially for breakfast was making me sad. This is a great alternative.

    High in protein: I love replacing all types of foods into alternatives that are packed with protein so I can squeeze in as much protein as possible.

    Easy and simple: just 2 ingredients and very minimal effort this bread with cottage cheese is ready in no time.

    No yeast: This two-ingredient cottage cheese bread recipe is great for those people who can't tolerate yeast.

    Customizable: I like to alternate between sweet and savoury versions of this flat bread. See suggestions in recipe tips and variations below.

    Ingredients needed for cottage cheese wrap

    This is basically a cottage cheese and egg flatbread so these are the two main ingredients, anything else you add to is optional.

    Cottage Cheese: I like using the high fat content of cottage cheese I can find in grocery store that I happen to go to for maximum flavor. But you can go for low fat if that's what you prefer and you can find flavor in other add ins.

    Eggs: I use large eggs that are room temperature for better results.

    Salt: cottage cheese is relatively high in salt but I like to add a little bit more.

    Oregano: for this recipe I added dried oregano but you can add any other herbs and spices of your liking. See recipe tips and variations for more suggestions.

    How to make 2 ingredient cottage cheese bread

    Step 1- Preheat your oven to 350°F. Line a 13 /9 baking sheet.

    Step 2- In a blender, handheld immersion blender or food processor mix in your cottage cheese and eggs, add your optional ingredients: salt and oregano and blend until you get a creamy liquid with no lumps.

    Step 3- Pour your egg and cottage cheese mixture evenly into the baking sheet and bake for 40 minutes.

    Step 4- Let it cool down completely to allow it to firm up. Serve it with as you would any flat bread with your favorite fillings. See below for suggestions.

    Recipe Tips

    • No need to worry if the mixture seems a bit runny because it will firm up nicely as it bakes in the oven.
    • A good starting point is using a 1:2 ratio of cottage cheese to eggs. For example, use 1 cup of cottage cheese with 2 large eggs. This ratio helps create a mixture that holds together well without being a little bit runny.
    • Cottage cheese can be bland, so don’t skimp on salt and other seasonings like garlic powder, onion powder, or herbs (e.g., dill, chives). This will enhance the overall flavor of the bread.
    • Consider draining some of the cottage cheese liquid before mixing it in to avoid a runny batter.
    • Even if you use parchment paper be sure to add a generous layer of olive oil as the mixture tends to stick.
    • Cooking times vary from one oven to another but check yours at the 25 minute mark.

    Recipe variations

    Savory flavors:

    Parmesan cheese.

    Italian seasonings, basil, thyme

    Everything bagel seasoning.

    Onion powder, garlic powder, paprika, smoked paprika, saffron. chilli powder.

    Sweet flavors:

    For a sweet bread with cottage cheese you can add a tablespoon of honey, maple syrup or sweetener of choice.

    You can also add things like vanilla, cinnamon.

    Coconut sugar, brown sugar, lemon zest.

    Savory toppings:
    - Tuna, red onion, lettuce and tomato.
    - Egg salad.
    - Chicken breast slices or deli meats with lettuce and pesto sauce.
    - Liver loaf slices.
    - Sliced avocado and cherry tomatoes.
    - Smoked salmon and cream cheese.

    Sweet toppings:
    - Strawberry and Greek yogurt.
    - Almond butter and honey.
    - Peanut butter with apple slices and a sprinkle of granola.
    - Dark chocolate chips melted slightly with almond butter.
    - Mascarpone & Fresh Berries.
    - Ricotta, pear or apple slices with chopped walnuts.
    - Nutella.

    Storage Instructions

    After your bread with cottage cheese has completely cooled down you can store it in an airtight container in the fridge for up to 3 days. It can be reheated in the air fryer, microwave or the oven.

    Frequently asked questions

    Can I replace eggs with egg whites or egg white liquid ?

    Yes absolutely, just replace 2 eggs with ⅓ cup of egg liquid.

    Can I bake the viral 2-ingredient cottage cheese flat bread in the air fryer?

    Yes, although there are a few adjustments to make: halve the ingredients, line the air fryer surface with two sheets of parchment paper, and ensure you don’t pour a thick layer. cook it at 400F for 15 minutes. Flip it after 10 minutes if needed.

    Can I use this cottage cheese flat bread to make pizza?

    Yes, you can use it as a pizza crust—just take it out of the oven 10 minutes early, add marinara sauce, mozzarella and toppings, then pop it back in.
